Welcome to Nickel Plate Kitchen! My name is Elizabeth and I’m so glad you stopped by. I like featuring good food on a budget, but I also like splurging on ingredients once in a while. I’m a stay-at-home mom of two boys (a three-year-old and a new born) and wife of Jim. My previous life involved teaching students with special needs at the junior high level for thirteen years. I love being home now. Besides my family, my other loves include food, photography and writing. I’m thankful for this outlet that includes all three!

As a fan of ALDI and frugal grocery shopping, I try to feature recipes that won’t break the bank and will be dining favorites. Low-carb and gluten-free are also here because several people in my life need those things. But I also believe in having varieties of great foods at gatherings. The name Nickel Plate Kitchen was inspired by the the local rail-to-trail here in north central Indiana – the Nickel Plate Trail.  In the 1920s a newspaper editor gave the New York, Chicago and St. Louis Railroad the nickname “Nickel Plate Road” that once connected Buffalo, Cleveland, Toledo, Chicago, Indianapolis, Cincinnati, and St. Louis. While the blog nods to a local namesake, it also suggests we can eat fancy food on a budget.  I hope you find something delicious here to fit your needs – budget-friendly fare for the journey!
