Instant Pot Italian Bean Soup

This Instant Pot Italian Bean Soup is delicious the day you make it, becomes even better tasting leftovers, and creates a wonderful freezer meal to use later. Above all, the ingredients can be found at ALDI too. Win, win. I’ve made this so many times, and neither me nor my family ever gets tired of it. My two-year-old likes all of it too — even the mushrooms!

This soup recipe comes from a friend, and I adapted it for the Instant Pot. I use the 6 quart version. 

 

 

What you need for Instant Pot Italian Bean Soup

You can use any Italian sausage you like for Instant Pot Italian Bean Soup. Sometimes ALDI carries this ground mild Italian sausage. Other times it’s in casings that just need removed.

Another necessity are the veggies and seasonings for Instant Pot Italian Bean Soup.

This ALDI brand of basil, garlic and oregano seasoned diced tomatoes truly helps make this soup what it is. You’ll need two.

 

 

 

Great Northern beans, cannellini or navy beans work well. You can use two cans, but I usually find one can is enough.

 

 

 

This recipe calls for salt, pepper, dried oregano, dried basil, dried thyme. Optional chopped fresh basil as garnish. But ALDI’s Italian Seasoning works well too since I’ve had trouble finding dried basil at my local ALDI.

And this recipe does take some prep time with the chopping of veggies. Likewise expect the pressure to build for about 30 minutes before the 5 minute cook time sets in.

Italian Bean soup for the Instant Pot brings together savory meat, veggie, and bean flavors that make great leftovers or freezer meals as well.

Ingredients
  • 16 oz Italian sausage
  • 2 cups water or broth
  • 1 yellow onion, chopped
  • 4 cloves garlic, smashed with side of knife blade
  • 4 stalks celery, diced
  • 4 carrots, diced
  • 2 (14.5 oz) cans Italian seasoned (basil, garlic & oregano) diced tomatoes and their liquid
  • 1 to 2 (15.5 oz) cans northern or cannellini beans, drained and rinsed
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp ground thyme
  • 2 small zucchini, diced
  • 1 (8 oz) container mushrooms, rinsed and sliced
  • Optional garnish: chopped fresh basil and grated Parmesan cheese
Directions
  • Step 1 Turn instant pot on to saute setting. Brown ground Italian sausage. Drain. Leave cooked sausage in Instant Pot. Turn off saute setting.
  • Step 2 Add water or broth and scrape bottom of pot with a wooden spoon to deglaze the cooked stuck bits of sausage.
  • Step 3 Add onion, garlic, celery, carrots, diced tomatoes, beans and spices. Stir well.
  • Step 4 Add zucchini and mushrooms on the top. Do not stir. It will be very full if you have a 6 quart pot.
  • Step 5 Secure lid on top, set valve to sealing position. Set Instant Pot to manual setting for 5 minutes (high pressure). Allow 30 min or more for pressure to build, depending on how full the pot is.
  • Step 6 Once timer goes off, allow a natural release for 5 minutes, then do a quick release until stopper goes down.
  • Step 7 Remove lid, give a good stir. Taste and add more salt if needed.
  • Step 8 Top with chopped fresh basil and grated Parmesan cheese if desired.
